This Competition BBQ Class will be held on February 12th and 13^th, 2011 in Scott City, KS at the fairgrounds. (Weather permitting…an alternate weather date will be determined)

We will have a full agenda prior to the class that will be distributed prior to the class as well as equipment lists and approved meats and garnishes that the students will need to bring.

The class will begin on Saturday evening (7 pm) and conclude on Sunday, early afternoon after the judging and clean up of the facility.

We will go over complete preparation, trimming and seasoning of meats, as well as all the cooking methods and techniques that we would do at a KCBS contest.   The pork butts and briskets will go on the smokers Saturday night and the ribs will be prepped before we go to quiet hour.  Ribs and chicken will be cooked Sunday morning.  We will stress time management throughout the class. (It’s important at a competition)  KCBS regulations on turn in boxes and presentations will be carefully detailed.   Students are encouraged to bring their smokers and comp meats and approved garnishes for turn ins.  This will be an overnight cook, so come prepared. We encourage questions from all in attendance. 

We will provide a breakfast on Sunday morning.

Refreshments will be provided, but if there are certain requirements that you have, please feel free to bring your own. This is an alcohol free (no alcohol allowed on the fairgrounds) event.

This is your opportunity to get hands on experience of a full KCBS BBQ Competition, without the panic normally involved.  We will show you how to rid panic from your bbq cooking. 

The registrations fees for this class are very reasonable considering the amount of knowledge and experience you will gain from this experience.

Individual registration is $150.00. A married spouse can attend for $50.00.
